Recipes

 

Cooking…I wouldn’t say it’s ‘my thing’.

​

My idea of cooking is a grilled cheese sandwich.

​

My husband cooks way better than I do. I can ruin a nice piece of beef in a heartbeat (other than hamburger). In fact, when he cooks dinner, we have a deal…I clean up. I would rather clean up the mess than make it.

​

I cringe at times when I hear that age-old question: ”What’s for dinner?” Seriously? The question, “Didn’t you eat breakfast or lunch today?” will go through my mind.  A few of my favorite answers have not gone over real well:

​

     Cereal – that’s for dinner. Have a bowl of good ol’ Charms of Luck!

​

     Popcorn? (I wasn’t as lucky as my mom to have gotten away with this one.)

​

     Fasting…we are fasting dinner tonight and possibly several nights a week from here forward.

​

When we were first married, I could only make about 3 dishes, one of which was Shake-n-bake chicken. I wore my husband out on that meal. I finally had to stop making it after about 18 years of marriage for fear of my husband shaking and baking me!

​

Obviously if I do cook dinner, I like it to be easy. And if it turns out and tastes good, well, that’s a plus.

​

Below are a few of my favorite recipes that have worked well in our home and still do….as long as I don’t make them every week.

Mexican Casserole
Salmon Portions with Dry Rub seasoning

Parmesan Roasted Potatoes
Ricotta Potatoes
 (I don’t make this all the time, but is great for get togethers)

Chocolate Chip Pan Cookies
Cornflake Cookies
 (this is a holiday favorite in my home)
Moist Chocolate Cake
